There is something so comforting about a warm, cheesy casserole. This Pioneer Woman Cowboy Casserole Recipe is one of my favorites. It is simple, filling, and perfect for busy days.

Ingredients
  

  • 1 pound ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 can corn drained
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 cups frozen tater tots

Optional:

  • 1/2 cup sour cream
  • Fresh parsley for garnish

Instructions
 

Cook the Ground Beef

  • Heat a large skillet over medium heat. Add ground beef and cook until brown. Break it into small pieces. Add chopped onion and garlic. Cook until soft and fragrant.

Season the Mixture

  • Add salt, pepper, and paprika to the beef. Stir well. This step builds flavor. Make sure everything is mixed evenly.

Add Corn and Soup

  • Pour in the corn and cream of mushroom soup. Add milk and stir until smooth. Let it cook for 2–3 minutes until slightly thick.

Add Cheese

  • Add half of the shredded cheese into the mixture. Stir until melted. This makes the filling creamy and rich.

Prepare the Baking Dish

  • Grease your baking dish lightly. Pour the beef mixture into it. Spread it evenly using a spoon.

Add Tater Tots

  • Place frozen tater tots on top in a single layer. Cover the whole surface. This creates a crispy topping.

Bake the Casserole

  • Preheat your oven to 200°C (400°F). Bake the casserole for 25–30 minutes. The top should turn golden and crispy.

Add Final Cheese Layer

  • Sprinkle the remaining cheese on top. Bake again for 5 minutes until melted. Let it cool slightly before serving.

Notes

  • Use ground turkey instead of beef for a lighter version
  • Add jalapeños for a spicy twist
  • Use mozzarella instead of cheddar for a different flavor
  • Add beans for extra protein
  • Try sweet corn for a sweeter taste
  • Do not overcrowd the tater tots for crispiness
