Ingredients
  

  • 500 g bacon chopped
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • ½ cup brown sugar
  • ¼ cup maple syrup
  • ¼ cup apple cider vinegar
  • ½ cup brewed coffee
  • ½ teaspoon black pepper
  • ¼ teaspoon salt

Instructions
 

Cook the Bacon

  • Place chopped bacon in a large pan. Cook over medium heat until crispy. Stir often to avoid burning. Remove bacon and keep some grease in the pan.

Cook the Onions

  • Add chopped onions to the same pan. Cook slowly in the bacon grease. Stir until they become soft and golden brown. This takes about 10 minutes.

Add Garlic

  • Now add minced garlic to the onions. Cook for one minute only. Garlic burns fast, so keep stirring gently.
  • Mix Sweet Ingredients
  • Add brown sugar and maple syrup to the pan. Stir well until sugar melts completely. The mixture will look thick and shiny.

Add Liquids

  • Pour in coffee and apple cider vinegar. Stir everything together. Let it simmer slowly on low heat.

Add Bacon Back

  • Put the cooked bacon back into the pan. Mix well so the bacon gets coated with the sauce.

Simmer Slowly

  • Let the mixture cook on low heat for 30 minutes. Stir sometimes. It will become thick and jam-like.

Blend the Jam

  • Turn off heat and let it cool slightly. Blend it for a few seconds. Keep it chunky, not too smooth.

  • Add salt and black pepper. Taste your jam and adjust flavors if needed.
  • Cool and Store
  • Let the jam cool completely. Store it in a jar. Keep it in the fridge for later use.
