Ingredients

  • 4 lbs large sweet potatoes peeled and cubed.
  • 1 cup apple juice or apple cider.
  • 1 ½ cups granulated white sugar.
  • ½ cup packed light brown sugar.
  • 1 tablespoon ground cinnamon.
  • ½ teaspoon ground nutmeg.
  • ¼ teaspoon ground cloves.
  • 1 teaspoon vanilla extract.
  • ¼ teaspoon salt.

Instructions

Prepare the Sweet Potatoes

  • Peel the sweet potatoes thoroughly. Cut them into small, even cubes. Place them in a large pot. Cover them with water. Bring to a boil and cook until very tender.

Drain and Mash

  • Drain the water from the pot completely. Let the potatoes steam for a minute. Use a potato masher or fork. Mash them until no large chunks remain in the pot.

Puree for Smoothness

  • Transfer the mashed potatoes to a food processor. Add the apple juice. Blend until the mixture is silky and smooth. This ensures your butter has a professional, creamy texture.

Combine with Sugars

  • Pour the puree into a large saucepan. Turn the heat to medium-low. Stir in the white sugar and brown sugar. Mix well until the sugars begin to melt and combine.

Add Spices and Aromatics

  • Stir in the cinnamon, nutmeg, cloves, and salt. These spices provide that classic Southern flavor. Add the vanilla extract last. The aroma will fill your entire home with sweetness.

Simmer to Thicken

  • Keep the heat low. Let the mixture simmer slowly for 30 minutes. Stir often so the bottom does not burn. The butter should become dark and very thick.

Cool the Butter

  • Remove the pot from the heat. Let the sweet potato butter sit at room temperature. It will thicken even more as it cools down. Patience is key for the best texture.

Jar and Seal

  • Spoon the cooled butter into clean glass jars. Leave a little space at the top. Seal the lids tightly. Your delicious homemade spread is now ready to be enjoyed

Notes

  • Use a Slow Cooker: You can cook this in a crockpot on low for 4-6 hours.
  • Adjust Sweetness: Reduce the sugar if your potatoes are naturally very sweet.
  • Add Citrus: A squeeze of lemon juice adds a nice bright tang to the finish.
  • Maple Twist: Swap half the sugar for pure maple syrup for a woody flavor.
  • Gift Idea: Put these in mason jars with ribbons for a perfect holiday gift.
  • Silky Texture: Always use a blender or processor to avoid a grainy mouthfeel.
