  • 1 large onion finely chopped
  • 1 bunch of fresh spinach chopped
  • 2 cups of grated Gruyère or Sharp Cheddar cheese
  • 8 large eggs
  • 3 cups of whole milk
  • 1 cup of heavy cream
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of coarse salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of ground nutmeg
  • 2 tablespoons of unsalted butter

Instructions
 

Brown the Sausage
