Ingredients
  

  • 250 g pasta penne or fettuccine
  • 300 g shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • ½ cup sun-dried tomatoes chopped
  • 1 teaspoon chili flakes optional
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish

Instructions
 

Cook the Pasta

  • Boil water in a large pot. Add salt and pasta. Cook until soft but firm. Follow the packet time. Drain the pasta and keep it aside. Save half a cup of pasta water for later.

Prepare the Shrimp

  • Wash and pat dry the shrimp. Add salt and black pepper. Heat olive oil in a pan. Cook shrimp for 2-3 minutes per side. Remove when pink and juicy. Do not overcook.

Make the Garlic Base

  • In the same pan, add a little more oil if needed. Add minced garlic. Cook for one minute until fragrant. Stir gently to avoid burning the garlic.

Add Liquids and Flavor

  • Pour in chicken broth and heavy cream. Stir well. Add sun-dried tomatoes, chili flakes, and Italian seasoning. Let it simmer for 5 minutes until slightly thick.

Add Cheese and Mix

  • Add grated parmesan cheese slowly. Stir until the sauce becomes smooth and creamy. Taste and adjust salt and pepper if needed.

Combine Pasta and Sauce

  • Add cooked pasta into the sauce. Mix well so the pasta gets fully coated. If the sauce is too thick, add a little pasta water.

Add Shrimp Back

  • Place cooked shrimp back into the pan. Mix gently. Let everything cook together for 2 minutes so flavors combine well.

Garnish and Serve
