Ingredients
  

  • 4 cups cooked chicken shredded or cubed
  • 1 can 10.5 oz cream of chicken soup
  • 1 can 10.5 oz cream of mushroom soup
  • 1 can 10 oz Ro-Tel diced tomatoes with green chilies
  • 1 medium yellow onion finely diced
  • 1 green bell pepper diced
  • 2 cups sharp cheddar cheese shredded
  • 12 to 15 corn tortillas torn into bite-sized pieces
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt and black pepper
  • Fresh cilantro for garnish optional

Instructions
 

Preheat the Oven

  • Set your oven to 350 degrees Fahrenheit. Lightly grease your 9x13 inch baking dish with cooking spray. This prevents the tortillas from sticking. It makes cleanup much easier later on.

Mix the Creamy Sauce

  • In a large bowl, combine both cans of soup. Add the undrained Ro-Tel tomatoes and all spices. Stir in the diced onion and pepper. Whisk until the mixture is smooth and well combined.

Add the Chicken

  • Gently fold the shredded chicken into the soup mixture. Make sure every piece of chicken is coated. This keeps the meat juicy while it cooks. It ensures flavor in every single bite.

Layer the Tortillas

  • Place half of the torn corn tortillas in the dish. They act as the base of your casserole. Try to cover the entire bottom surface. This creates a solid foundation for the sauce.

Spread the Filling
