Ingredients

  • 2 cups pecan halves
  • 1 egg white
  • 1 tablespoon water
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

Instructions

Prepare the Oven and Baking Sheet

  • Preheat your oven to 300°F. Line a baking sheet with parchment paper. This step prevents sticking and makes cleanup easier later. Place the baking tray aside while you prepare the pecans.

Whisk the Egg Mixture

  • Take a medium bowl. Add the egg white, water, and vanilla extract. Whisk until the mixture becomes light and slightly foamy. This mixture helps coat the pecans evenly with sweet flavor.

Coat the Pecans

  • Add the pecan halves into the egg mixture bowl. Stir gently using a spatula or spoon. Make sure every pecan gets a light coating. This step helps the sugar mixture stick well.

Prepare the Sugar Mix

  • In a separate bowl, mix granulated sugar, brown sugar, cinnamon, and salt. Stir everything well so the spices spread evenly. This sweet mixture will create the crunchy coating.

Combine Pecans with Sugar

  • Pour the sugar mixture over the coated pecans. Stir slowly until every pecan gets covered in sugar and cinnamon. The pecans should look sandy and well coated.

Spread on Baking Sheet

  • Spread the pecans evenly on the prepared baking sheet. Try not to overlap them too much. Keeping space between them helps them bake evenly and become crispy.

Bake the Pecans

  • Place the tray in the oven. Bake for about 30 minutes. Stir the pecans once every 10 minutes. This helps them cook evenly and prevents burning.

Cool Before Serving

  • Remove the tray from the oven. Let the pecans cool completely on the baking sheet. As they cool, the sugar coating becomes crunchy and delicious.

Notes

  • Store candied pecans in an airtight container.
  • Keep them at room temperature for up to one week.
  • For longer storage, keep them in the refrigerator.
  • Freeze them for up to two months.
  • To refresh them, warm briefly in the oven.
