Ingredients

  • 1 pound fresh French green beans haricots verts.
  • 1/2 cup sliced almonds blanched.
  • 3 tablespoons unsalted butter.
  • 2 tablespoons good olive oil.
  • 1 teaspoon kosher salt.
  • 1/2 teaspoon freshly ground black pepper.
  • 1 tablespoon fresh lemon juice.
  • Zest of half a lemon optional for extra zing.

Instructions

Prepare the Green Beans

  • Start by washing your fresh green beans under cold water. Trim off the tough stem ends with a sharp knife. Ensure all the beans are roughly the same length for even cooking later.

Blanch the Beans

  • Bring a large pot of salted water to a rolling boil. Drop the green beans into the water for exactly 2 to 3 minutes. They should be bright green and crisp-tender.

Use an Ice Bath

  • Immediately move the beans from the boiling water to a bowl of ice water. This stops the cooking process instantly. It keeps the beans from turning mushy or losing their color.

Toast the Almonds

  • Place your sauté pan over medium heat and add the butter and oil. Add the sliced almonds to the pan. Cook them for 3 to 5 minutes until they are golden brown.

Sauté the Beans

  • Drain the cold green beans very well and pat them dry. Add them into the pan with the toasted almonds. Toss them gently to coat every bean in the warm butter.

Season and Finish

  • Sprinkle in the salt, pepper, and fresh lemon juice. Stir the mixture for about 2 minutes until the beans are heated through. Garnish with lemon zest if you want extra flavor.

Notes

  • Dry the beans: Make sure the beans are very dry after the ice bath. Water will make the butter sauce thin and greasy.
  • Watch the almonds: Almonds can burn in seconds. Stay near the stove and stir them constantly while they toast.
  • Use Haricots Verts: These are thinner French beans. They cook faster and have a much more delicate flavor.
  • Add Garlic: If you love savory flavors, add one minced garlic clove with the almonds.
  • Brown the Butter: Let the butter cook until it smells nutty for a deeper flavor profile.
