Ingredients

  • 2 cups Panko breadcrumbs for extra crunch
  • 1 cup all-purpose flour
  • 3 large eggs beaten well
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 2 cups marinara sauce choose a high-quality brand
  • 1.5 cups shredded mozzarella cheese
  • 1/2 cup vegetable oil for frying
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

Prepare the Chicken

  • Place chicken breasts between two pieces of plastic wrap. Use a meat mallet to pound them thin. Aim for a half-inch thickness. This helps the chicken cook evenly and quickly. Season both sides with salt and pepper.

Set Up Breading Stations

  • Put flour in the first bowl. Put beaten eggs in the second bowl. Mix breadcrumbs, parmesan, and spices in the third bowl. This creates an organized workspace for you. It prevents a big mess in your kitchen.

Coat the Chicken

  • Dip each piece of chicken into the flour first. Shake off the excess. Dip it into the egg wash. Finally, press it firmly into the breadcrumb mixture until fully covered. Make sure the coating is thick.

Heat the Oil
